Pomegranate Dark Chocolate Coins

This is quite possibly the easiest thing I’ve ever made. And soooo good. If you’re someone who likes a sweet treat but doesn’t have a huge sweet tooth, this is for you. It’s the perfect after dinner bite and just try to tell me they wouldn’t stunninggg on a holiday table.

Melt some dark chocolate in a double broiler. It doesn’t need to be melting chocolate; just use solid dark chocolate. I grabbed two bars from Whole Foods, but you could get from anywhere. Once it’s melted, use a spoon to form circles – any size you like – onto wax paper. Press pomegranate seeds on top. As long as the seeds are touching the chocolate, they’ll stay put. (Meaning, don’t make a mound of pomegranate; they’ll roll off.) I bought already seeded ones. It was more expensive than buying a whole pomegranate and coaxing out the seeds myself, but I really valued my time and neat workspace in this instance. Stick in the fridge for 30+ minutes and enjoy.

I’m MUCH more of a dark chocolate girly, but I think it particularly works here against the juicy pomegranate seeds. If you were to use milk chocolate, you might want something like sea salt to balance it out. With the dark chocolate, these are refreshing, not cloying, and really pop in your mouth.
